Penne alla Vodka
Fancy enough to impress. Easy enough that you won't need the vodka to cope.

INGREDIENTS
- —1 lb penne
- —3 cloves garlic, minced
- —1 medium onion, finely chopped
- —2 tablespoons butter
- —2 tablespoons olive oil
- —1 cup vodka
- —14 oz can tomato sauce
- —1 cup heavy cream
- —1 generous pinch red pepper flakes
- —1/4 to 1/2 tsp salt
- —Freshly ground black pepper
- —Grated Parmesan, for serving
INSTRUCTIONS
- 1Cook the pasta according to package directions. You know how to boil water.
- 2Sauté the garlic and onion in 2 tablespoons butter and the olive oil over medium heat until soft.
- 3Pour in the vodka. If your stove has an open flame, remove the pan from the heat first. Cook and reduce for 2-3 minutes.
- 4Pour in the tomato sauce and stir until combined. Reduce heat to low, then pour in the heavy cream. Stir again. Let it simmer on the lowest heat possible.
- 5Add the red pepper flakes, salt, and pepper.
- 6Toss in the drained pasta and coat it thoroughly. Top with Parmesan and more red pepper flakes if you want. Serve immediately.
