Penne alla Vodka

Fancy enough to impress. Easy enough that you won't need the vodka to cope.

INGREDIENTS

  • 1 lb penne
  • 3 cloves garlic, minced
  • 1 medium onion, finely chopped
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1 cup vodka
  • 14 oz can tomato sauce
  • 1 cup heavy cream
  • 1 generous pinch red pepper flakes
  • 1/4 to 1/2 tsp salt
  • Freshly ground black pepper
  • Grated Parmesan, for serving

INSTRUCTIONS

  1. 1Cook the pasta according to package directions. You know how to boil water.
  2. 2Sauté the garlic and onion in 2 tablespoons butter and the olive oil over medium heat until soft.
  3. 3Pour in the vodka. If your stove has an open flame, remove the pan from the heat first. Cook and reduce for 2-3 minutes.
  4. 4Pour in the tomato sauce and stir until combined. Reduce heat to low, then pour in the heavy cream. Stir again. Let it simmer on the lowest heat possible.
  5. 5Add the red pepper flakes, salt, and pepper.
  6. 6Toss in the drained pasta and coat it thoroughly. Top with Parmesan and more red pepper flakes if you want. Serve immediately.
